Do you remember the days when the lunch bell rang, signaling the excitement of discovering the treasures hidden in your lunch box? Join me as I take a trip down memory lane, revisiting some items—some I’d rather forget—and the iconic snacks and treats that fueled my childhood adventures and satisfied my youthful cravings.
Growing up, I preferred school-provided lunches because I was always a light eater during the day and often chose to skip lunch altogether, giving me more time to play outside. On the rare occasions when I did pack a lunch, my favorite treat to find was cheesy crackers with peanut butter.
If I could recreate one school lunch item from scratch, it would be the cardboard pizza, which holds a nostalgic place in my memories.
I believe school lunches have followed societal trends, offering kids mostly unhealthy options—it’s all bread, cheese, and breaded chicken. The ultimate school lunch menu should include a variety of fresh vegetables, quality protein, and educational elements to teach kids about healthy eating.
The secret to making the ultimate lunchbox meal is making it fun for the kids. Incorporate variety and focus on nutrition tailored to the people eating it. Packaging a well-balanced meal that stays fresh and is kept at the right temperature is also important.
I’d love to see overnight chia pudding with fresh berries and granola in a breakfast box.
